Translated as ‘white almond,’ ‘Almendra Blanca’ derives its name from the distinctive white hue of this special cocoa bean, lending the finished bar a visually lighter appearance, despite its high cocoa content. Sourced from a 30-hectare estate, this exceptional white cocoa serves as a cornerstone for the Agrofloresta’s training initiatives, catering to indigenous smallholder farmers participating in the Selva Tabasqueño project.
Established in 2014 by Hugo Francisco Chavez and his associates, Agrofloresta Mesoamericana embarked on the transformation of a degraded terrain into a diverse cocoa forest, which now serves as a demonstrative farm for organic cocoa cultivation within an agroforestry system, incorporating indigenous timber tree species.
At the farm, a collection of ten local cocoa varieties is nurtured, stemming from decades of careful selection of native cocoa trees. These varieties collectively represent some of the finest Criollo Tabasqueño cocoa, often recognized as Almendra Blanca due to the prevalence of white beans among these cocoa types. While the farm prioritizes the preservation of white-seeded cocoas, it also cultivates Criollo Tabasqueño cocoas with purple beans, known for their outstanding flavor characteristics, resulting in final batches comprising approximately 70% white beans.
Notably, the availability of this exceptional chocolate remains limited, with volumes typically hovering around 1 ton per year. From the 2021 harvest, a mere 400 kg found its way to Europe, underscoring the rarity and exclusivity of this exceptional treat.
