Friis-Holm Chokolade, founded by Danish chef Mikkel Friis-Holm, aspires to be one of the top chocolate makers globally with the mission: “Best in the world, best for the world.” Mikkel’s passion for chocolate was sparked in the late 90s during his time in San Francisco, where he connected with Scharffenberger Chocolate. In 2007, he began collaborating with Nicaraguan cacao farmers through a Danida-supported project, and those beans remain central to Friis-Holm’s production. After years of honing his craft, Friis-Holm established a factory in Denmark in 2014, where all production has since taken place.

The Madagascar 64% Slow Dried is made from cacao beans from the renowned Bejofo Estate in Madagascar. After fermentation, the beans are sun-dried gradually—2 hours on the first day, 4 hours the second day, 6 hours the third, and 8 hours per day thereafter. This slower drying process results in a more complex flavor profile compared to our Madagascar 64% Fast Dried chocolate. While both have clear and simple tasting profiles, the Slow Dried version offers a deeper complexity with delightful notes of raspberry.
