Friis-Holm Chokolade, founded by Danish chef Mikkel Friis-Holm, aspires to be one of the top chocolate makers globally with the mission: “Best in the world, best for the world.” Mikkel’s passion for chocolate was sparked in the late 90s during his time in San Francisco, where he connected with Scharffenberger Chocolate. In 2007, he began collaborating with Nicaraguan cacao farmers through a Danida-supported project, and those beans remain central to Friis-Holm’s production. After years of honing his craft, Friis-Holm established a factory in Denmark in 2014, where all production has since taken place.

Madagascar 64% Fast Dried is crafted from cacao beans sourced from the renowned Bejofo Estate in Madagascar, known for producing world-famous cacao. We call this “Fast Dried” because after fermentation, the beans are sun-dried for 8 hours each day, unlike the slower process used for our Madagascar 64% Slow Dried. This faster drying method results in a distinctly acidic, spontaneous, and clean flavor profile, making it a vibrant and unique chocolate.
