Friis-Holm Chokolade, founded by Danish chef Mikkel Friis-Holm, aspires to be one of the top chocolate makers globally with the mission: “Best in the world, best for the world.” Mikkel’s passion for chocolate was sparked in the late 90s during his time in San Francisco, where he connected with Scharffenberger Chocolate. In 2007, he began collaborating with Nicaraguan cacao farmers through a Danida-supported project, and those beans remain central to Friis-Holm’s production. After years of honing his craft, Friis-Holm established a factory in Denmark in 2014, where all production has since taken place.

The Rugoso Bad Fermentation is a unique chocolate in the same series as our Rugoso 70%. Named for its imperfect fermentation process, where not all cacao beans turn brown as expected, this “bad fermentation” creates a fascinating flavor profile. It is a very unique chocolate with loads of flavour, good tanins and notes of baked plums.
