The cocoa beans for the D.A.R.C. Angel chocolate comes from the Cacao Bisiesto plantations in La Dalia, in the Matagalpa region of Nicaragua. The company owes its name to the day it was founded (February 29), which occurs only in leap years; bisiesto in Spanish. Founders José Enrique Herrera and Giff Laube work closely with farmers to ensure that the quality of the cocoa remains high and that they earn more than if their cocoa entered the mainstream market. Together they ensure that nature and the cocoa are respected throughout the production process and that the cocoa has such a subtle bitterness and acidity. The taste is very intense and reminiscent of coffee and nuts.
