This chocolate is made from cocoa harvested in the Kaithapara forest of Kerala, India, a region famed for its rich spice heritage. Grown by a community living in the Idukki district, the cocoa benefits from the area’s vast mountain forests and gentle climate. Historically introduced by the British in the 18th century from Indonesia’s spice islands, the cocoa is cultivated alongside a diverse array of spices and fruits, enriching its flavor. The unique combination of cocoa and local spices defines the distinctive terroir of Kaithapara. The organic cocoa provides a stable and eco-friendly income for the families, contributing to biodiversity and ecosystem health. In the 1980s, local cocoa varieties, including Forastero and rare white beans, were planted, leading to the creation of unique hybrids that contribute to the fine taste of this chocolate.
